But, wiser now, in some things at least, most definitely in terms of food, I have gained not just an appreciation but an absolute adoration for the bitter bite of dandelion greens. Plus, I'm so lucky to live in a neighborhood where a short walk to the market will bring me to flowing crates full of both bitter & sweet varieties of these versatile greens. Delicious in a salad or sauteed with a little olive oil and whew, I can't even begin to tell you about all the health benefits these lovely leaves pack! Used as a digestive aid, liver tonic, may help to balance blood sugar, high in potassium and so much more!
